Being a seaside establishment our seafood is sustainably sourced through local suppliers. All of the fresh produce we use at the Villa including fresh fruit and vegetables such as pineapple, bananas, cashew nuts, tomatoes and potatoes to name a few, is locally sourced.

We also have our own vegetable garden fondly known as Jardim de Pomona, that produces Lettuce, Cucumber, Aubergine, Spinach, Beans, Coconuts and herbs including Basil, Dill, Thyme and Organum for our kitchen on a daily basis.

One of our special lunch venues is our lovely veggie garden: Jardim de Pomona. Guests are treated to an al fresco lunch, amongst the fresh herbs and their heady aroma. Beef and Fish Espetadas are cooked over coals in front of clients and tasty spinach / kale wraps, with a selection of fresh fillings, are enjoyed in this tranquil setting.

We buy all of our seafood from a local fisherman named Adelino. Adelino was born here in Vilankulo and started fishing when he was only 13. He became a tourist guide and provided tourists with the freshest seafood.  Adelino then started his own business and registered his own company. The business has been growing from strength to strength and he now also has his own delivery vehicle. He enjoys showing his clients how to clean and cook crayfish and other fish.

We are so proud that our staff vegetable garden, that was built during lockdown as a way to support our staff and their families during the pandemic, is being continuously harvested. The Staff Vegetable Garden is another way that we are helping the community.
