On check out day, our guests are asked at breakfast to complete our guest evaluation form and write a short (or sometimes not so short) snippet in our beautiful guest books. It provides us with a real insight into what we’re doing right and where we can make changes to keep giving our guests what they want. Almost always, the various dining experiences are mentioned.

It was through our guest feedback over the years that we’ve been able to introduce some our much loved favourite experiences, like our lazy bean coffee service. A quaint faded grey crate with coffee and cookies is quietly placed outside guests room from 7am. The thermal bamboo flask filled with Mozambican roasted coffee keeps hot for 12 hours, allowing guests to enjoy at leisure.

The food throughout the day is yummy and presented with our signature style, always considerate of the small details. But it is the location that brings these experiences to life. Firstly, breakfast, lunch and dinner are served in different locations throughout the villa. A 3 course lunch over-looking the rim flowing martini pool with breath taking views of the archipelago one day, to poolside with the chef preparing your pizza to order in the wood oven the next. Picnics on the beach under the cabanas are a must – the breakfast picnic especially is a favourite. Feet in the sand under the cabanas which perfectly frames the phenomenal view of the ocean, whilst sipping on freshly squeezed orange juice and enjoying home made out of the oven local banana bread – in one word – heaven!

We source as many ingredients locally as possible. It was in 2017 when we extended our veggie garden to also be able to supply the villa with organic and larger variety of produce. The original plan was to build 24 raised beds but during construction we realised this was a special spot on the property it would be silly not to share to it. So, in place of 2 beds we built a concrete dining and serving table and our vegetable garden lunches were created. The menu is designed to celebrate the fresh produce grown in our garden and throughout Mozambique. This experience has become such a talking point among our guests we now set up different tables throughout the garden for all our guests to enjoy this experience together.

A holiday at Santorini Mozambique is about the indulgence of all the senses – To see the million shades of blue in the postcard perfect Indian Ocean, to feel the pristine sand between your toes, to smell the fresh sea air, to listen to flock of flamingos fly over the villa and to taste the many delights on offer. Santorini is food for the soul.
